I had this problem yesterday while trying to jailbreak 1.1.3 using ZiPhone 2.6b. Everything went smoothly, jailbreak didn't report to any problems, and there are no unforeseen errors.
However, when I went into Installer app and try to add a new source, my keyboard freezed! :(
So I decided to reset my iPod, at least, I can still hear my sync-ed music.
How to Force Reset
You can force reset your iPod Touch when it stopped responding completely. Resetting can be easy, however there is no "reset" button. So you'll need to perform the following:
Step 1: Hold both Home and Standby button simultaneously
Step 2: When it restarts (after 10 seconds or so), wait until the "Apple" logo appear, then release all buttons pressed
Step 3: Wait for approximately 1 to 2 minutes until it goes back into your SpringBoard homescreen, then go and manually turn off your device. If you don't do this, you might get another freeze soon.
Step 4: Once you've rebooted it manually, refrain from using the application that is causing the crash.
The only way to rectify the problem is to completely remove the crashing app, or perform a clean restore and re-jailbreaking it (well I did that, and now it's working correctly).

Sorry but its froze. Yah sorry but I could never learn english if I were from Singapore. It took my friend 2 restores to fix on 1.1.4. He used an earlier version of ziphone though.
What do you mean "I could never learn english if I were from Singapore?" Is my writing THAT bad??? :'(
Anyway, the force reset doesn't help? Mine freezes quite a number of times though, but after I did a full restore and rejailbreak, everything seems fine.
It looks like it's the "keyboard freeze" bug.
To fix that, simply write some gibberish in your contacts, then exit (pressing home), then launch Installer app. I don't know why, but that helped me.
But now, I'm back to a unjailbroken 1.1.4, I'm trying to correct a lot of bugs and errors that are surfacing every now and then.
